Best finish for Birch

I've just finished a small carving in Birch and I want to retain the pale white colour as much as I can. I have a selection of the usual finishing oils but they tend to yellow fairly quickly. I have some mineral oil which might work.
Any other suggestions?

Water based polyurethane is good for not yellowing.
