It'll be rubbing up and down on a bit of stone, most likely with oil - rounded bevels and all!
Brilliant bit of craftsmanship - reminded me of the Swedish clog makers:

it's bad enough just kneeling......
I hope those blanks are just branch trimmings.....they used to do stuff like that here with olive wood......
not such pretty spoons tho.....

I am in awe over the craftsmanship. The skill and precision in using the adzes is just incredible.
