I want to apply a finish to an american ash top on a kitchen island and slatted shelf underneath. I really like the paleness of the ash and dont want to darken it at all with a finish, i made a table with an ash top and put an oil it to finish it, but it has darkened the top. Any ideas??

Water-based finishes tend not to darken or deepen wood colours. Oil-based finishes do. Perhaps you can build up enough coats of a water-based polyurethane finish.

I used Arylic Based lacquer on this:

It hasn't darkened yet.
