    wearing off .001" off the back of the iron sharpened to 30 degree pitch (assuming a flat grind} has exactly zero (.000) effect on the edge, it's still 30 degrees. do the geometry. Original grinding SHOULD have made all cutting eges co-planer with the all the cutting edges,so same logic applies...

    99% of the time trying to reshape the cutting edge is a fools errand, one simply laps and hones the flat side of the blade..a crack 15mm from the end may be a "hard steel" laminating error, and if lapping the flat side yields a good cut, let sleeping dogs lie

    What are my options

    I would be tempted to try a shim under the hinge on the bottom left that would raise the bottom right side of the door, and maybe endsure that the bottom of the door(s) is painted to avoid moisture absorption. Many painters seemingly avoid this essential detail for expedience!

    Rawhide mallet. What would they have been used for.

    How would you make this?

    wood movement is a red-herring. not to be worried about in counterops. Length is. suggest 3 sections or start cutting yer own trees, milling, drying etc!!! Not likely I don't think even custom veneer suppliers could accommodate that Eric in the colonies
