    Hello and welcome- I too get side tracked by other projects and interests - gardening fishing a little metal work and many building related stuff. So making space for all the tools and equipment is a major challenge. But it’s all good stuff and good to hear others are the same .

    Your sacrificial top is a good idea , as for the rest just make it solid. If you glue everything up then making any alterations or modifications at a later date will be more difficult imo of course.

    The dewalt is well worth considering imo . The problem with the cheaper saws you have already mentioned in your post . Accuracy, depth of cut , fences that move etc . Unless you have the space and the funds for a cast iron pro saw ( used ) then you will have to most likely increase your budget...

    The worst I’ve ever fitted on 2 separate jobs was from b n q -it was misshaped and getting it to lock in was a Nightmare. The better quality 10/12 mm is fine imo.     Your biggest issue seams to be the water pressure is fluctuating from almost nothing to above what most plumbing is designed for .the water mains pressure should be constant apart from peak times .
