Yeah, I'm amazed how well they've done in this area, almost double the growth compared to trees planted elsewhere at the same time, the whips in the 2nd vid were added last year.

That's where the worst cracks/splits will come from, removing it will allow the wood to dry more evenly so less cracks, you will still get small end cracks but shouldn't get anything catastrophic

Trace around it and when you cut it out leave the pencil line, it will either be a perfect fit or you'll need to remove a hair thickness at a time until it does fit.

I agree on willow, can't quite tell which species of willow though, there are several. It can be as difficult as cherry to stop from cracking/splitting and generally has a plain grain, however the stuff I have contains a blue like colouration in the spalting.

I second the condensation problem, the local football club hire our field at weekends and have a metal shed on site, it's constantly damp in there, once you insulate it maybe consider adding solar powered fans to the vents.
