I have a rough idea how it works... Compressed air I suppose, but the associated programming must have been a nightmare!

Its what happens to the balls after they have played their note, every one, and I mean EVERY one is bounced off into a fairly small funnel, the bounce off direction would be more random, there is no way you could recover all the balls like that.
